The Carver's Knife was established in 2004 by Calvin Vaags when the borders closed due to the BSE crisis. Since that time the store has grown and has purchased a slaughter facility in Carman. It has also started a wholesale program and sells Manitoba Beef through out the city and province.
In 2010, The Carver's Knife opened a second retail location on Marions St located in the Dominion Center.

The Carver's Knife mission is to provide the public with a quality local and affordable product as well as support the local farming community.
